A wholesome, sweet and nutritious breakfast porridge made with buckwheat groats and carrots. This recipe serves one, but can be easily doubled.

Ingredients
  • ¼ cup Buckwheat groats
  • ½ cup water
  • ¼th to ½ of a carrot (shredded)
  • ½ teaspoon of cinnamon
  • 1 tablespoon ground flax seeds
  • ¼ to ½ tablespoon maple syrup
  • *Optional: handful of chopped and whole pecans
  • *Optional: handful of raisins
  • *Optional: spoonful of hemp seeds
Instructions
  1. Thoroughly rinse and drain buckwheat groats.
  2. Shred carrots.
  3. Add water and buckwheat groats to a pot and bring to a boil.
  4. Turn down to medium heat.
  5. Add shredded carrots and flax seed and mix in.
  6. When water dissolves, mix in cinnamon, maple syrup and chopped pecans (if using).
  7. Stir for 1 to 2 minutes.
  8. There ya have it! Top it with some whole pecans, raisins and hemp seeds and it's ready to serve!
